Good Morning and Happy Thursday!

I’m short on time this morning and I woke up really hungry.  You know what that means? That today I am going to blog about Food!! More specifically, pizza.  Doesn’t everyone love pizza?

Pizza is one of those foods that has so many different variables to it, that you could literally come up with thousands of combinations! Starting with the type of crust, then sauce, cheeses, and of course the toppings.  While I love a good ol’ pepperoni or sausage pizza, I have found that there are many other pizzas that I absolutely love.  I bet you do, too.  Last night at dinner with a group of friends, one of my BFFs was telling us that her favorite pizza has sauerkraut, pickles and sausage.  That’s a little weird, isn’t it? My theory is “don’t knock it until you try it”.  While I have never tried this seemingly strange combo, several other friends nodded in agreement that this was an awesome combo.

Here are some of my favorite combos that are a little out-of-the-ordinary.  Note: I love red sauce but these all feature a different sauce 😉

      • Petso, Mushroom and Brie

    • Pesto, shrimp and spicy sausage
    • Creamy dill sauce, caramelized red onion, roasted red bell pepper, grilled chicken
    • Tzaziki sauce, grilled chicken, sauteed red onion, feta and mozzarella, diced tomatoes with cool tzatziki drizzled on top
    • chive oil, fresh garlic, wild mushrooms and boursin cheese, topped with fresh sprouts.

  • Pepperoni, pineapple, banana pepper and a splash of Franks hot sauce
  • Peanut sauce, mozzarella, spicy chicken, red onions, cilantro, carrots, bean sprouts, serrano chilies)

Happy Thursday! The weekend is nearly here.  Hooray!

Many, many years ago when I was actively involved in blogging and had a long-time community of bloggers, many of us would use Thursdays to post about a social issue or various topic that we had on our minds or wanted to know what others thought.  We coined these posts Thoughts for Thursday (TFT).  It has been many years since I have written a  TFT, but today seems like a good time to get back into, especially after hearing a discussion this morning on my radio morning show.  The cast of the show was talking about BUSINESS CARDS.  Their theory is that people like to inflate their title on the business card, to show an inflated sense of importance.  They also believe that most people never look at business cards again after receiving them or they throw them away.

I am a teacher.  Never in 18 years have I had a business card, and I don’t know of any teachers that do.  I have seen them from many people who work in district-level administrative positions, but never from a teacher.  We write weekly newsletters and send them home with the kids.  Parents know how to get ahold of us 😉

I also currently have a side-business as an Ambassador with Plexus Worldwide.  We are a health and wellness company if you haven’t heard of us. Many of my teammates have business cards, but even after a year now, I haven’t ordered any.  I probably should though! I’m sure it is much more professional when handing out samples. I better get on that, right? LOL

I have, however, had business cards for my restaurant review website,  Twin Cities Restaurant Blog.  Old news because I haven’t maintained the site in over four years now.  My business cards were bright and colorful and matched the logo from my site.  The only info they had was my website, name and email.  I would leave them on the table or with the check at every restaurant we visited.  I also passed them out to people frequently after telling them about my website or when people would start talking restaurants or food.  People were happy to take them and I think they must’ve used them too, website was very popular.

I rarely take or receive business cards from anyone.  I have a few from friends in my desk drawer, but I can’t think of any from strangers that I’ve kept.  I also do not actively use LinkedIn.

So here are my questions for you:

Thoughts for Thursday: Overwhelming love for your new baby

Here I am on day four of mommyhood and so far every moment and experience has been a joy, even during the hard parts (which have been very few, really).  It is true when people tell you that you will never believe how much you can love your new baby until he/she is here.  The feeling is incredible.  My heart melts every time I hold him and especially when I am feeding him and see him watching me.  The bond during breastfeeding is beyond words.  I think Erick are I are adjusting well to parenthood ( yes, we are both pretty tired!) and we work really well as a team to support each other.  Despite this, my hormones are in overdrive and I am feeling very emotional, which I have been assured is normal.  Everyone keeps saying to “enjoy these moments with your baby as a newborn because they don’t last long” but every time I think about him growing up and changing it makes me so freakin sad.  Like cry my eyes out sad, and I can’t seem to help it.  I know that I am going to enjoy every milestone as he gets big, but a part of me  wants him to stay so sweet and innocent forever.

His tininess melts my heart. We are so incredibly blessed!

Have you been watching the news lately about the resignation of Pope Bendict XVI and the search for a new Pope? In the past few days, the World has been watching the Vatican for news of a new Pope during Conclave and in case you hadn’t heard the news, a new Pope from Argentina was elected yesterday.

The Pope is a BFD, even if you aren’t Catholic!  Apparently the new leader is very humble and chose his name after St Francis of Assissi.  There is hope that he will restore faith in the Catholic Church after so many years of scandal.

While I was born and raised Catholic and nearly my entire extended family still follows it, I do not consider myself Catholic and haven’t since I was 12.  I won’t get into the reasons, I just knew at that time that the Catholic Church wasn’t for me.  Despite this fact, I can see the enthusiasm of Catholics around the world who are thrilled that Pope Francis will be their new leader.

Any thoughts or excitement on your end about the new Pope? Or could you care less?

Thoughts for Thursday: Preparing for Childbirth

Yep, another pregnancy post.  I am sure I am boring some of you to tears but this is my life these days!!!  I am at 44 days or less and counting….. am I going to be ready when the time comes??? I do not have my hospital bag packed and I have yet to formally write out a birth plan.  My greatest fear is going too early, in fact I had a dream about it early this morning…..

I dreamt that I was home alone and my baby was suddenly about to be born without warning.  Two quick pushes later and Bretton was here, with the umbilical cord still attached to both of us.  I immediately put him to my breast to feed while frantically trying to get ahold of Erick to let him know the baby was born and we needed to get to the hospital immediately.  He weighed 6lbs 15 oz and was 20″ long and healthy, despite being born early.

While I can only hope for an easy delivery, I am obviously panicked about it happening too fast and not being ready.  I assume these fears are normal and part of the process.  I was born 4 weeks early and barely made it to the hospital before my mom had me, so I think that is another thing that is always in the back of my mind.

Mommies, If you have any words of reassurance or advice for me, I’d be happy to hear it!!

Okay, so even though we have known for a few months what we are planning to name our little guy, for whatever reason I have been reluctant to spill the beans on the internet.  However, see me in person and I can’t wait to share! Weird, I know.  All in good time, my friends.  I will reveal baby boy’s name soon, but before I do, I would love to know how you decided what to name your children and how long did you have the names picked out in advance? Or did you wait to meet your little one before naming him/her??  Traditional or Trendy?? Unique or common??? Names are such a BFD, they are with us for a lifetime!

Thoughts for Thursday: Adults Who Wear Pajamas in Public

I am curious to know what your initial impression is of adults who wear their pajamas out in public??  I am not referring to yoga or sweat pants, I mean actual pajama pants with cartoons or prints on them.

I think its no secret that I work at an inner-city school and many of our families are very poor.  Is this an excuse to wear pajamas to your child’s school??  I know I am not yet a mom so maybe it is unfair of me to judge, but I see it as laziness or lack of hygiene or low class or who knows what.  All I know is that it bugs me.  If you want to wear your pajamas around your own house all day…. cool!!! But wearing them out in public is a no-no that you will never catch me displaying.  I vow to always put on a pair of jeans and a clean shirt.  Make up too!!! Some of you moms might be laughing at me right now, thinking I am unrealistic but I feel pretty strongly about this and will most definitely stick to my guns.  I wouldn’t be caught dead out and about in my pajamas.

Thoughts for Thursday: Epidural or Natural Childbirth??

I am sorry to those of you readers who I promised this would not become a pregnancy blog or a mommy blog.  Can I help it if this baby who is due to come into and take over my life in 13 weeks or less is at the foremost of my thoughts??!! I appreciate your understanding 😉

We’re going to be taking a childbirth class sometime next month and I know the hospital will give me the rundown of all the options for pain medication and risk vs reward.  Before I get their professional information, I’d like to hear from all of you…..

The big question of the day is about getting an epidural vs having the baby naturally and drug-free.  I know that doing it without drugs is safer for the baby, but most people tell me that if I’m given the option of an epidural, I better take it.   Have I mentioned that for most of my life I have been freaked out at just the idea of giving birth??  Up until now, I have been in denial about this part of the pregnancy 😉  However, the thought of not feeling half my body really freaks me out as well.  Is there a happy medium somewhere??

Any advice for me??  If you’ve had children, what option did you seek???

Have you been watching the news lately??

It seems there is a flu epidemic going on right now that is worse than any we have seen in decades.  So many are dropping like flies that everyone is encouraged to get their flu shots, but I wonder how effective they really are?  One mom and her two daughters were interviewed on TV, sick with flu and they had gotten their flu shots!!

The last flu shot I got was 2 or 3 years ago and I literally came down with the flu 4-5 days later.  Sick sick sick.  I can’t help but to believe the flu shot was the culprit!! That was the last flu shot I ever had.  Once bitten, twice shy and all that.  I know that being pregnant reduces your immunity to just about everything, but I am extra reluctant to get a shot again.  The last thing I want is to get the flu or expose my baby to it…… its like a catch 22.

How about you? Did you get a flu shot this year?? Do you plan to?  Are you worried that you may contract the flu even if you’ve had this year’s flu shot??

Thoughts for Thursday: Sleep

I’m only half way through NaBloPoMo and I’m already reaching for things to blog about!

At the moment I am thinking about sleep, or in my case, lack thereof.  Every night I get up at least three times to use the bathroom and usually around 3am I can’t get back to sleep.  I’m uncomfortable because of my shoulder pain and I end up tossing and turning.  Having a body pillow hasn’t seemed to help much.  I’ve also been having wicked dreams lately, a few of which involved travel abroad…… one of which was a crazy trip to the Yucatan in MX where I was on some adventure with Laura, except it wasn’t in Cancun, it was somewhere much more rustic and slightly scary.  The other involved stealing a moped and buying meats from an Italian Deli.  I’m weird!  I wish I could remember more of them or record themright when I get up when they’re still somewhat fresh in my mind.

I hope I can get some better sleep this weekend 😉

Thoughts for Thursday: Finding out the Gender of Your Unborn Baby

One thing that everyone always wants to know when they find out you’re pregnant:

Do you know if its a BOY or a GIRL?? Are you going to find out???? Or let it be a surprise??

People seem to either want to know before-hand, or not (I guess those are the only two options, right??! lol)

We have our big ultrasound the day after Thanksgiving and YES, WE WANT TO FIND OUT!!!  It is still going to be a surprise to us whether we find out at 19 weeks or when the baby is born, right??

I think knowing the sex makes it easier to plan for a first baby.  At this point we have absolutely NOTHING for this baby (but a whole lot of love!) and I can’t wait to buy some clothes for him or her….. something that isn’t gender neutral.  We want to get the nursery ready.  We want to be able to visualize this baby as a real person….a little boy or little girl.  We want to be sure of our baby’s name (still working on a girl’s name, have the boy picked out).

Anyway, November is here and therefore so is National Blog Posting Month (aka NaBloPoMo), a challenge to blog every day during the month of November.

I’ve never officially signed up to do this because that is a lot of pressure to blog every single day for 30 days, but I tried it the past two years and successfully did it both years!!  Who would believe it??

Well, since I have a little more energy these days and since I have been on a good blogging streak for a few weeks now, I think I am going to make this a personal challenge to make it a third year in a row.  Go 2012!

I promise that they will NOT all be pregnancy/baby posts.  Don’t want to bore ya’ll even though I am excited to share most of that stuff!

Happy Thursday, my dear internet friends.

I have a somewhat depressing topic to talk about today that involves death.  A few years back I blogged a Thoughts for Thursday about Dying Young and I guess this is somewhat of an extension.

After the recent death of my friend’s mother, I have really been thinking a lot about death, the cost involved and final wishes.

Did you know that most funeral/burials will cost anywhere from $7,000-10k? Cremation isn’t much cheaper.

That is why it is so extremely important to have LIFE INSURANCE! Life Insurance is not just so your family can survive financially if you die.  It is also meant to help pay for funeral costs. It is my opinion that everyone should have life insurance, regardless of age. I also think people need to make it known what their final wishes are.

My dad has made his wish to be cremated pretty clear but I have no idea what my mom would want for her funeral.  I know they have life insurance and I am sure they have a will, but I have never seen it or discussed it with them.  It is one of those things that most people just don’t talk of very often.  After recent events I feel that it is important to have this out in the open.

Have you had this discussion with your parents or other loved ones? Do you know of their final wishes? Do you know where to locate important documents just in case??? Are you and your significant other covered by life insurance?? What about your children???? Horrible to think about, I know, but who wants to be stuck with a $10k bill at the saddest time of their life?! Not me!

I encourage you to think about these things before the time comes 🙂

I am not much of a collector (as an adult) but there are certain things that catch my eye and I just know I have to have it.  Good thing these items are all relatively inexpensive…..

My partner, however, is a Collector Maximus.  For real, he collects many different things including hand-painted fishing lures, Magic cards, glass art, concert t-shirts, Warhammer figurines, etc

Have you seen this phenomena around Facebook or the internet??

A few weeks ago I saw a post on FB where my SIL Michelle posted this photo (below) and I had no idea what it was all about, but then I saw more elves doing more mischievous deeds and caught on to the idea.

It is the latest way for parents to bribe their kids into being good during the month of December.  Apparently you tell your kids that Santa sent this Elf to watch you and every night he reports back to Santa.  More info and ideas about Elf on the Shelf in this video (Youtube has hundreds of Elf on a Shelf pranks and ideas!)

Apparently you can find a ton of ideas for your Elf on a Shelf on various blogs……. IF YOU HAVE THE TIME to pull pranks (on behalf of your Elf) in the middle of the night.  No?  Check out what a blogger mommy at “People I want To Punch in the Throat” blog has to say about Over-Achieving Elf on the Shelf MommiesJenny posted the link to this article on FB last night and I thought it was simply HILARIOUS and had to share!! Even if you have no idea about this phenomena, it is a very funny read, go check it out!

Thoughts for Thursday: How Much Do You Like your Job/Career?

Work.  Nearly everyone’s gotta do it, right?

Some people are truly blessed to have jobs/careers that they love.  I am one of those people 😉

I haven’t always been so fortunate to be doing what I love so I understand what it is like to wake up each day, dreading what your day at work will be like.  I worked a few minimum wage jobs in HS and while I was in college I worked in group homes and as a Personal care Attendant for some bad-ass special ed kids for $8/hr.  I rarely talk about those jobs because they still conjure up disturbing situations that I was put through.  You will read about them someday in my future book 🙂

After graduating with BS in Special Ed and teaching a very difficult group of 7-8th graders for just a few years, I was ready to throw in the towel.  I came home and cried every night and I was absolutely miserable.  Not to mention my paychecks alone were small enough to cry over…. I was getting my butt kicked for what?! I felt like I had too much to offer and none of it was appreciated, whatsoever.

Fortunately I started a graduate program during that second year of teaching that would allow me to move out of special ed to the other end of the spectrum…. to work with kids that were very bright and loved to learn.  It took two years to earn my Masters but it allowed me to move into the field I was meant to work in, with students I was meant to teach.  My salary also jumped up significantly with the extra schooling.  This path has not always been the smoothest and I have endured many changes in placement and with instructional leaders, but I still wake up each day feeling blessed that I am doing what I am doing.

What do you consider the best/worst thing about your job??

Its Thursday……. why not do a TFT? Its been over a year since I last posted one and I used to LOVE this feature.

Today’s topic?  Traveling to see a concert.

We love seeing live shows and have been to many, many concerts over the years.  (My Top 10 concerts as of 11-09 are listed here & a list of concerts I have been to as of 9-08 can be found here).  We have traveled long distances specifically to see a few different shows.  Ex:  Santana in Vegas on 12-31-99  and last spring when I bought a new car and then drove to Boston the next day to see Massive Attack.

We also just bought tickets to see Sade in Chicago late this summer which I am beyond excited about!

So my question for you today……..

What is the farthest you have traveled, specifically to see a concert?

What bands do you love enough to travel long distance to see?

I may have led some of you to believe that since I have been trying a lot of new recipes lately, that I am a good cook.  Well, sometimes I am, but sometimes my meals do not turn out as good as expected.

Example….. I found a crock-pot recipe book recently and thought I would try a recipe for pork chops in orange sauce.  It sounded good at the time, really! I thought it would be kind of Asian-like.  WRONG.  I started the recipe before working a 12 hour day and had been looking forward to dinner all day long.  What a disappointment it turned out to be!! YUCK.  Like inedible, waste-of-food.

I had taken photos of the whole process like I have been doing lately so I will post a photo of the final product but I refuse to share the awful recipe.  Looks a million times better than it tasted.

So I have had a heck of a week with my car! I will blog more about it later.  Anyway, never before until this week have I considered leasing a vehicle, but having a shiny new car that I can hand back after three years seems more and more appealing.  The thing that has always held me back is that you get absolutely no equity from leasing.

So I’d like to hear from everyone else….. what are your thoughts on leasing a vehicle???
